Food: Mini-Pancakes on a Stick
Master H is soon celebrating his 4th party, which means only one thing – Paarrrttttyyyyy! Well, that’s how he would pronounce it. I call it ‘The-big-final-after-weeks-of-preparations’. True to myself, a lot of the stuff that’ll go into the goodie bags will be homemade. Follow this years preparations here. Here’s part 4. Click here for part 3.
While we’ll be waiting for the crafts projects to dry, we’ll be having a tiny tea party with – aehm – milk and pancakes on a stick. And because I’m a control freak, we’re having a trial run today. Without milk though as due to the sever weather conditions people have been raiding the shelfs and there was no milk left. On a positive note, I now know that the following recipe works fine without milk, too:
List of ingredients:
- 120g plain flour,
- 40g sugar,
- 2 tsp baking powder (appr. 3/4 of a sachet),
- 1/2 tsp baking soda,
- 1/2 tsp salt,
- 240g plain greek yoghurt,
- 2 tbs melted butter, and
- 2 eggs
Mix flour, sugar, baking powder, baking soda and salt in a medium sized bowl. Add yoghurt, butter and eggs. Mix until the batter is smooth.
Use a teaspoon to drop the pancake batter into a hot, heavy bottom griddle (or crepe pan). Cook for 1 minute on medium heat. Add lollipop stick and use said teaspoon to even the pancake batter on top again.
Leave another minute. Turn and cook for another minute or until golden brown. Serve with golden sirup and fresh fruits.
